Well, typical Texas weather, it went from tolerable to 105 degrees in a day! When it’s hot we all want to cool off however we can. Some Texans go to the lake, the beach, the pool or just have a backyard BBQ. We all want a cocktail to accompany our summer fun and the best way to cool off your cocktails is to freeze them. Daiquiris are a classic and have been around since the late 1800’s (check out our previous post Classic Cocktails…A Little History). They have become a popular summer treat. You can purchase one in New Orleans, LA and walk around the French Quarter while you enjoy the smooth cool drink in just about any flavor you can imagine. I chose a Frozen Strawberry Daiquiri as my cool down summer cocktail. Easy to make and you can whip up a blender full, (Or Not!) So breakout the blender and enjoy. ~~Kay
Frozen Strawberry Daiquiri
- 2 ounces light rum
- 1/2 ounce fresh squeezed lime juice
- 1 ounce simple syrup
- 1 cup ice
- 6 strawberries (fresh or frozen)
Glass: Chilled Coupe
Garnish: Thinly sliced lime wheel
Pour rum, lime juice, simple syrup and strawberries in a blender and pulse until blended. Add ice and blend until smooth. Add ice as needed to get the consistency you like.
Pour into chilled coupe and garnish with the lime wheel.
HINT: Double the recipe, you won’t be sorry !!
White Wine Sangria
I wanted something refreshing that could use the beautiful fresh fruit of summer so I made this pitcher of White Wine Sangria. Enjoy!~~Lynda
- 1/4 cup sugar
- 1/4 cup brandy (you can substitute dark rum if you prefer)
- 1 cup sliced peaches (fresh or frozen)
- 1 cup sliced strawberries (fresh or frozen
- 1 lemon sliced
- 1 lime sliced
- 1 orange sliced
- 1 bottle (1.5 liter) dry white wine
Dissolve sugar in the brandy in a large pitcher. Add sliced fruit and fill pitcher with wine. Chill 3 to 4 hours (even better overnight). Add ice to wine glasses, pour sangria. If you like you can top with sparkling water or club soda—even sparkling wine works.
Note: if you prefer a sweeter version you can use a sweeter white wine like Moscato and/or top with a lemon/lime soda.
