Mint Juleps without the Derby…

Tomorrow should be the 146th running of the Kentucky Derby. We’d be watching with Mint Juleps in hand but this year the Derby is on hold. It’s scheduled for September 5, 2020 and I’m keeping my fingers crossed that all is well and it can run without further delay. However, that doesn’t mean that I’ll forgo my traditional Mint Julep tomorrow. Check out our post for last year’s Derby for the recipe.

In case you’d like some snacks to go with that Julep, but you don’t want to run out to the store, try these Homemade Microwave Potato Chips with Bacon French Onion Dip (also homemade). And, the yes the microwave potato chips are crispy and delicious!

Microwave Potato Chips

Homemade Microwave Potato Chips – Cooling
  • 2 medium-size russet potatoes
  • 1 tablespoon extra-virgin olive oil
  • Salt to taste

Slice potatoes into 1/8 inch thick slices. You can try this with a knife but it will work much better if you have a mandoline.

Cut a circle of parchment paper and line a microwave safe plate. Arrange potatoes in a single layer and microwave for 4 minutes or until they start to brown. Repeat until all potatoes are cooked. Sprinkle with salt as they come out of the microwave.

You can serve these chips with a homemade Bacon French Onion Dip or just eat them on their own.

Either way, they are gooood!

Bacon French Onion Dip

  • 3 medium size yellow onions – sliced thinly
  • 2 tablespoons butter
  • 2 teaspoons salt
  • 1 tablespoon brown sugar
  • 12 ounces sour cream
  • 8 ounces cream cheese, softened
  • 4 or 5 slices of bacon cooked crisp and crumbled
  • Splash of Worcestershire sauce
  • Fresh parsley and/or smoked paprika for garnish

Over medium heat melt 2 tablespoons in a heavy saucepan or skillet (cast iron works best), add the onions and sprinkle with salt and brown sugar. Cook until the onions caramelize. This will take time (30 minutes or more), just keep stirring occasionally until onions are soft and golden brown.

Mix the sour cream and softened cream cheese together. Coarsely chop your onions and mix well with sour cream and cream cheese mixture. Stir in the bacon and a splash of Worcestershire sauce. Sprinkle with parsley and smoked paprika if desired. Chill and serve.
